Red

Pepper

Nothing highlights the sweetness of a red bell pepper more than roasting it.  The charred edges give the hint of smoke, and it's the perfect pairing with asparagus.

Asparagus

Asparagus is my favorite vegetable.  I love it grilled, roasted, in soups or pasta, and as a stand-alone side dish.  It needs little seasoning and sprinkled with a bit of fresh parmesan cheese, it's always delicious.

Chicken

Smoked, grilled, sauted, fried or baked….give me chicken and I'm a happy girl.  Chicken is so versatile, and in this recipe, you can prepare it any way you like.  Feeling lazy?  Simply buy a rotisserie chicken from the grocery.  It's just that easy.

It's always my favorite dish…any time of the year.  The ingredients are readily available at my grocery.  It's a lasagna that I can modify depending on how much time I want to spend in the kitchen and the ingredients I have on hand.  Any way I put it together, it's always incredible.
